As you can see, U.S. broccoli consumption has increased dramatically over the last 35 years.  And yet, on average Americans consume less than 1/10th of 1 serving of broccoli per day.  Broccoli has come so far in such a short time, but has so far to go until it can join its rightful place at the center of the American table. 

Despite its meteoric rise, broccoli consumption pales in comparison to the American diet's overwhelming reliance on potatoes.  Perhaps most disappointingly, broccoli consumption remains lower than more than one type of lettuce.  Of the 1.7 servings of vegetables that Americans eat every day, potatoes account for 0.59 servings while broccoli accounts for only 0.037 servings.
